Tasty Tuesday-John's Chicken Bacon Chowder

John found/modified the recipe for this soup the first year we were married. It is hearty, takes some effort, and fairly unhealthy. But it is delicious :) John usually makes this b/c there is so much dicing involved (Kristen = lazy), hehe.

John's Chicken Bacon Chowder

Ingredients:
1 lb. bacon
3 cups diced celery
1/2 cup diced onion
4 cups diced potatoes
3 cups chicken broth
2 cups diced carrots
3 cups diced cooked chicken
2 cans condensed cream mushroom soup
1/2 tsp salt
1/2 tsp pepper

Directions:
- Cook bacon until crisp, drain, keeping 2 Tbs drippings.
- Crumbled bacon and set aside.
- Saute celery and onion in drippings until tender.
- Add potatoes, broth, and carrots.
- Bring to boil.
- Reduce heat. Cover and simmer 20 min. or until vegetables are tender.
- Stir in remaining ingredients and heat through.
