Here's a lil something I picked up from the Campbell's Kitchen website. Most of the time, I find their recipes a bit bland or super unhealthy. This one is only slightly unhealthy and is delicious. My favorite part is it only takes a few minutes and is made mostly from things you have on hand.
Chicken and Black Bean Quesadillas
Ingredients:
1 can condensed Cheddar Cheese Soup
1/2 cup salsa
1 cup rinsed/drained canned black beans
2 (4.5 oz) cans chunk chicken in water, drained OR chicken that you've cooked and cubed
10 (8 in) flour tortillas
Directions:
- Preheat oven to 425 F
- Heat the soup, salsa, beans, and chicken in a saucepan over medium heat until the mixture is bubbling.
- Place the tortillas onto 2 baking sheets. Spread 1/3 cup soup mixture onto half of each tortilla within 1/2 inch of the edge. Brush the edges of the tortillas with water. Fold the tortillas over the filing and press the edges to seal.
- Bake for 5 minutes or until the filling is hot. Cut the quesadillas in half.
* Serve with Spanish Rice and sour cream.

Quesadillas are our go-to... had them last night, in fact (with some leftover fajita fixins from the night before). I'll definitely have to try this recipe out.
To make our quesadillas, we heat up the meat/veg and heat the tortillas in another pan on medium until it's warm (maybe 30 seconds). Throw in your grated cheese and filling, fold over, and boom! Dinner's ready!
