Tasty Tuesday

I am really enjoying writing these tasty Tuesday posts :) They are easy! Just pick recipes you make constantly and put them in writing!

Spanish Rice

Ingredients:
3 Tbs. veg. oil
1 cup uncooked long grain rice
1 tsp garlic salt
1/2 tsp cumin (or taco seasoning)
1/4 cup chopped onion
1/2 cup tomato sauce (or one small can)
2 cups chicken broth

Directions:
* Heat oil in saucepan over medium heat and add rice. Cooking, stirring constantly, until golden. Sprinkle with garlic salt and cumin while cooking.
* Stir in onions and cook until tender.
* Stir in chicken broth and tomato sauce.
* Bring to a boil.
* Reduce heat, cover, and simmer 20-25 min.
* Fluff with a fork and serve.

Notes:
* Makes a great side for enchiladas or tacos. Adding rice and beans to tacos really bulks them up and adds nutrition for very little $$/effort.
* If you don't have chicken broth on hand, just add 2 cups water + 2 chicken bullion cubes instead.
* If you don't have an onion (or heck, just don't feel like chopping one), you can sub in dry minced onion (smaller amount, of course) and its still quite good.
* You can chop onions ahead of time and then freeze them. Pull your bag out of the freezer 30 min before cooking and you are ready to go! This is a great time saver.

I never thought about chopping a bunch of onions and freezing them!!! That is brilliant! I get so tired of dicing onions and having to use a cutting board for just 1 ingredient in a recipe. Great idea!!!
