Tasty Tuesday

I feel that most people don't have a good connection with jell-o salads. Some of them are fairly disgusting. Some are delicious, but look pretty disgusting :-p. *I* think that my mom's cranberry salad is pretty and tastes yummy! It is very cranberry-y, so if that's not your thing, stay away. Otherwise, this is a great side for any meal, but particularly a holiday meal or on a day when it's really hot.

Mom's Cranberry Salad

Ingredients:
1 1/2 cups boiling water
2 regular sized or one large Jell-O packet(s)
1 cup OJ
1 can crushed pineapple
1 can whole berry cranberry sauce
Optional: Chopped walnuts or pecans

Directions:
* Dissolve Jell-O in boiling water.
* Add OJ, pineapple, cranberry sauce, and chopped nuts (if desired).
* Pour into (pretty) bowl and allow to congeal in fridge for at least 1.5 hrs.
Extra Info:
* Jell-O flavor suggestions - strawberry, raspberry, cherry, etc.
* Very yummy with turkey or ham.
* FYI, the nuts will all rise to the top, which actually makes it look nice, in my opinion.
* If you eat part of it and then put it back in the fridge for later, it will get watery. That's OK, it can either be poured out or stirred back in- really makes no difference and won't hurt a thing.
